Even the goats are super chilled at the SanBrite mountain-hut restaurant. Tucked away in the Dolomites, this modest-looking establishment champions local produce and a healthy life­style - but it's the owners who have put it on the culinary map. Ludovica Rubbini runs the place with her husband, Riccardo Gasparo, who is also the chef; he's worked with the likes of Michelin-starred Massimo Bottura. Wanting a simpler life, the couple opened SanBrite, a mountain-side restaurant with a farm shop. This was where they could make the best use of their own cheese - and rediscover local ingredi­ents such as lichen from the nearby forest.
